Shoulder Roast:

This lean roast is soft and very flavorful. Upon request we will be happy to tie and roll it for you. This can also be cut into cubes for a very lean stew or ground for chopped veal.

 

Shoulder Steak:

$14.98  / lb.

 

A very lean steak with a small bone, can be cut to serve two.

 

Breast of Veal:

$ 9.98 / lb.

 

Can be roasted or braised. Our expert butchers will be happy to make a pocket for you to stuff.

 

Neck of Veal:

$ 13.98 / lb.

 

This cut of veal is one of the most tender and delicious. Can be roasted or braised.

 

Veal Scaloppini: (from the shoulder)

$29.98 / lb.

 

This thin cutlet is soft enough for very fast cooking, such as frying or sautéing.

 

Veal Spare Ribs:

$ 9.98 / lb.

 

Cut from the breast these ribs are tender and delicious. We’ll even marinade them for you.

 

Veal Shank: (Osso Buco)

Sliced into thick pieces this is a delicious and rich cut of meat that is best when braised or stewed.

 

1st Cut Veal Chop:

$25.98 / lb.

 

Cut fresh from the rack then weighed and trimmed to your preference. For fancy meals this is best when broiled or grilled.

 

Center Cut Veal Chops:

$17.98 / lb.

 

Not quite as fancy looking as the 1st cut but every bit as delicious. There is also a greater meat to bone ratio. Can be broiled, grilled or baked.

 

2nd Cut Veal Chop:

A great chop for frying, baking and braising.

 

Rack of Veal:

Cut fresh from the rack then weighed and trimmed to your preference. For those extra special meals this makes a delicious roast.

 

Ground Veal:

We use only hand boned meat and make sure there is just the right amount of fat to make this delicious.  Patties + $1.00/lb.

 

Cubed Veal:
