The Rib Lamb Chops left whole as a rack, typically 7 bones. May be "Frenched", trimming the meat off the end off the bones. Also may be trimmed completely down to the eye removing all the fat (“top off”) or leaving the “top on” for an extra delicious bite. Please specify in the "special instructions" If you would like the rack Frenched and/or how you would like it trimmed. Please also note that Rack of Lamb is sold by untrimmed weight and can lose more than 50% of the gross weight when fully trimmed.
